Mediterranean Grilled Chicken Skewers

Ingredients

• 1 pound skinless, boneless chicken breasts, cut into 1-inch cubes
• 1/4 cup extra-virgin olive oil
• 2 cloves garlic, minced
• 1 tablespoon fresh lemon juice
• 1 teaspoon dried oregano
• 1/2 teaspoon dried thyme
• 1/2 teaspoon dried basil
• 1/2 teaspoon salt
• Freshly ground black pepper, to taste
• Wooden skewers, soaked in water for 30 minutes before grilling
• Fresh parsley, for garnish (optional)

Instructions

1. In a mixing bowl, combine the olive oil, minced garlic, lemon juice, dried oregano, dried thyme, dried basil, salt, and black pepper.
2. Add the chicken cubes to the bowl and toss until well-coated with the marinade. Let the chicken marinate in the refrigerator for at least 2 hours or overnight for best results.
3. Preheat your grill to medium-high heat.
4. Thread the marinated chicken onto the wooden skewers.
5. Grill the skewers for about 4-5 minutes on each side or until the chicken is cooked through and slightly charred.
6. Remove from the grill and let them rest for a few minutes.
7. Serve the Mediterranean grilled chicken skewers hot, garnished with fresh parsley if desired. They can be enjoyed on their own or served with a side of couscous or a Greek salad.

Note: Serve with a refreshing glass of chilled white wine to complement the flavors of the Mediterranean.
